Spicy Plantain Chips

Ingredients

  • 2 tbsp coconut oil melted, divided
  • 1 green plantain unripe, peeled and sliced thin - Plantains look like oversized bananas. They can be found in all latin markets or health food stores, but are also increasingly easy to find at supermarkets.
  • 1 lime juiced
  • 1 tsp chili powder
  • 1 tsp cumin
  • ¼ tsp cayenne pepper
  • ¼ tsp salt

Instructions

  • Preheat oven to 400° F. Coat a baking sheet with 1 tablespoon of coconut oil (or use coconut or olive oil cooking spray here).
  • Put the other melted tablespoon of coconut oil and lime juice in medium-large bowl and whisk. Add the plantains and stir until all slices are well coated.
  • Add all the spices and mix until well coated.
  • Lay them in single layer on the baking sheet and bake for about 15-20 minutes, flipping mid-way through. The time will depend on how thick you slice them, so keep an eye on them. They are finished when they are golden and crispy. Let cool a bit and enjoy!

Notes

These are our new favorite “chip.” They are salty, spicy and a tad sweet - awesome on their own or with some of your favorite dip. Like their plant sister the banana, plantains are high in many minerals but most notably potassium, additionally they’re dense in vitamins A & C as well. These are best enjoyed fresh.
