Ingredients

  • 6 organic eggs
  • 2 tbsp honey
  • ¼ cup coconut oil melted
  • ½ tsp apple cider vinegar
  • 1 cup cashew meal or almond flour
  • ¼ cup chia seeds ground (you can do this in a blender)
  • 3 tbsp coconut flour
  • 1 tsp baking soda
  • ½ tsp sea salt

Instructions

  • Preheat oven to 350° F. Very liberally grease the pan with coconut oil, especially along the bottom.
  • In a large bowl, vigorously whisk the eggs, then add the honey, coconut oil, and vinegar until thoroughly mixed.
  • In a separate bowl, stir the nut meal/ flour, ground chia, coconut flour, baking soda, and sea salt until well mixed. Fold the dry ingredients into the wet ingredients with a wooden spoon. Be sure not to overmix. Pour the batter into the loaf pan and bake for 35-40 minutes.
  • Remove from oven and allow to cool in pan for about 15 minutes. Remove from pan and cool completely on a wire wrack. Slice and enjoy!
