Using a hand mixer, mix the wet ingredients until smooth. Add the dry ingredients except for goji berries and chocolate chips, and mix until combined. Then fold in the goji berries and chocolate chips (will not judge if you add waaaaay more chocolate chips). Next, using a cookie scoop, scoop batter onto a parchment-lined baking sheet.
Bake cookies for 11-13 minutes until the tops become crackly but the center still feels soft. Let cool completely on a cooling rack before digging in.
