Grain-Free Dark Chocolate Olive Oil Cookies

Ingredients

  • 1 ½ cup almond flour
  • ¼ cup coconut flour
  • ¼ cup cacao powder
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 1 organic egg lightly beaten
  • ¼ cup extra virgin olive oil
  • ½ cup pure maple syrup
  • 1 tbsp goji berries (optional)
  • ¼ cup dark chocolate chips

Instructions

  • Preheat the oven to 350°F.
  • Using a hand mixer, mix the wet ingredients until smooth. Add the dry ingredients except for goji berries and chocolate chips, and mix until combined. Then fold in the goji berries and chocolate chips (will not judge if you add waaaaay more chocolate chips). Next, using a cookie scoop, scoop batter onto a parchment-lined baking sheet.
  • Bake cookies for 11-13 minutes until the tops become crackly but the center still feels soft. Let cool completely on a cooling rack before digging in.
