Sandwich Bread, Upgraded
Serves: 1 8x5 loaf
6 organic eggs
2 tablespoons honey*
¼ cup coconut oil, melted
½ teaspoon apple cider vinegar
1 cup cashew meal or almond flour
¼ cup ground chia seeds (can do this in a blender)
3 tablespoons coconut flour
1 teaspoon baking soda
½ teaspoon sea salt
*Omit if doing PN Clean
1. Preheat oven to 350 F. Very liberally grease the pan with coconut oil, especially along the bottom.
2. In a large bowl, vigorously whisk the eggs, then add the honey, coconut oil and vinegar until thoroughly mixed.
3. In a separate bowl stir the nut meal/flour, chia meal, coconut flour, baking soda and sea salt until well mixed. Fold the dry ingredients into the wet ingredients with a wooden spoon, be sure not to overmix. Pour the batter into the loaf pan and bake for 35-40 minutes.
4. Remove from oven and allow to cool in pan for about 15 minutes. Remove from pan and cool completely on a wire wrack. Slice and enjoy!
One of the most common things we hear (and we feel ourselves) is that people miss bread - they want that sandwich fix! We hear you.
