Preheat oven to 425°F. Line a baking sheet with parchment paper.
To make the beet chips, slice the whole, raw beets into thin slices.
Arrange on baking tray lined with parchment paper and spray with coconut oil spray or lightly brushed with oil. Sprinkle the sliced beets with sea salt.
Bake for 10-15 minutes, flipping halfway through cooking. Allow to cool.
