1pintcherry tomatoes

1bunchgreen beansfresh, blanched in boiling water for 2 minutes
½headpurple cabbageleaves separated
1cupradishes
drizzleextra virgin olive oil
freshly ground pepper
1cupHerbed Hummus(recipe below)
Herbed Hummus
½cupfresh Italian parsley
½cupcilantro
½cupbasil
1cangarbanzo beansor cannellini beans, rinsed and drained
4tbsptahini
3tbspwater
1lemonjuiced
1clovegarlic
½tspcumin
¼tspred pepper flakes
2tbspextra virgin olive oil
sea saltto taste
Instructions
Hummus
Add the herbs into a food processor or high-speed blender and blend until minced.
Add in everything else except for the olive oil and salt and blend until smooth, at least 1 full minute. While the processor is running, slowly add in the olive oil, this will help make it extra creamy.
Taste it and add salt as needed, blending after to incorporate.
Platter
Prep and clean all the vegetables and arrange on a platter.
Scoop hummus into a smaller bowl in the center of the platter and give it a drizzle of olive oil and freshly cracked pepper.
