Stir the tahini so the oil is incorporated. Then mix the wet ingredients until smooth and combined. Add the remaining dry ingredients except for chocolate chips and mix again until absorbed. You should have a sticky-ish dough ball at this point. Fold in chocolate chips (we'll leave the amount up to you!).
Line a baking sheet with parchment paper. Roll tablespoon-sized dough balls and place on the baking sheet. Sprinkle each cookie with a bit of sea salt and bake for 10-12 minutes.
