Double Chocolate Tahini Cookies

  • 1 egg
  • ½ cup tahini
  • ½ cup coconut sugar
  • 2 tbsp coconut oil (room temperature)
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • ½ cup cocoa powder
  • ½ tsp baking soda
  • ½ tsp salt
  • chocolate chips
  • Preheat oven to 350°F.
  • Stir the tahini so the oil is incorporated. Then mix the wet ingredients until smooth and combined. Add the remaining dry ingredients except for chocolate chips and mix again until absorbed. You should have a sticky-ish dough ball at this point. Fold in chocolate chips (we'll leave the amount up to you!).
  • Line a baking sheet with parchment paper. Roll tablespoon-sized dough balls and place on the baking sheet. Sprinkle each cookie with a bit of sea salt and bake for 10-12 minutes.
  • Cool on a cooling rack for 10 minutes.
