Crockpot Moroccan Lentil Stew

Ingredients

  • 1 ½ cup green lentils
  • 1 onion diced
  • 1 bell pepper diced
  • 3 carrots large, diced
  • 3 cloves garlic minced
  • 1 inch ginger grated
  • 14 oz diced tomatoes canned
  • 2 tbsp harissa paste
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 2 tsp salt
  • 1 ½ tsp black pepper
  • ½ tsp chili flakes
  • 4 cups vegetable stock or water
  • 1 can chickpeas drained and rinsed
  • 1 lemon juice and zest
  • ½ cup fresh parsley

Instructions

  • Place all ingredients except for the chickpeas, lemon, and parsley into the crockpot. Stir to combine.
  • Cook on high for 4-6 hours, or low for 6-8 hours.
  • Stir in the chickpeas, lemon, and parsley and let warm through for about 5 minutes.
