Crockpot Moroccan Lentil Stew

Ingredients

green lentils

onion
diced

bell pepper

carrots

garlic

diced tomatoes
canned

harissa paste

paprika

tsp
cumin

tsp
cinnamon

black pepper

chili flakes

vegetable stock
or water

can
chickpeas
drained and rinsed

lemon
juice and zest
½
cup
fresh parsley
Instructions
Place all ingredients except for the chickpeas, lemon, and parsley into the crockpot. Stir to combine.
Cook on high for 4-6 hours, or low for 6-8 hours.
Stir in the chickpeas, lemon, and parsley and let warm through for about 5 minutes.
