Crockpot Moroccan Lentil Stew
Ingredients
- 1 ½ cup green lentils
- 1 onion diced
- 1 bell pepper diced
- 3 carrots large, diced
- 3 cloves garlic minced
- 1 inch ginger grated
- 14 oz diced tomatoes canned
- 2 tbsp harissa paste
- 2 tsp paprika
- 1 tsp cumin
- 1 tsp cinnamon
- 2 tsp salt
- 1 ½ tsp black pepper
- ½ tsp chili flakes
- 4 cups vegetable stock or water
- 1 can chickpeas drained and rinsed
- 1 lemon juice and zest
- ½ cup fresh parsley
Directions
- Place all ingredients except for the chickpeas, lemon, and parsley into the crockpot. Stir to combine.
- Cook on high for 4-6 hours, or low for 6-8 hours.
- Stir in the chickpeas, lemon, and parsley and let warm through for about 5 minutes.
