Combine the wet ingredients until smooth, then add the dry ingredients except for the cashews and mix until everything is incorporated.
Then, gently fold in the cashew pieces. Line a baking sheet with parchment paper. Using a cookie scoop, dollop the cookies onto the baking sheet, and sprinkle a little extra salt on top of each.
Bake for 8-11 minutes.
The cookies will be fluffy and golden brown.
Let them cool on a rack for at least 20 minutes before digging in.
