Salted Cashew Butter Cookies

  • 1 cup cashew butter
  • cup honey
  • 1 egg
  • ¼ cup cashews chopped
  • ¼ cup coconut flour
  • ½ tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp salt + more for sprinkling on top
  • Preheat the oven to 350° F.
  • Combine the wet ingredients until smooth, then add the dry ingredients except for the cashews and mix until everything is incorporated.
  • Then, gently fold in the cashew pieces.

 Line a baking sheet with parchment paper. Using a cookie scoop, dollop the cookies onto the baking sheet, and sprinkle a little extra salt on top of each.
  • Bake for 8-11 minutes.
  • The cookies will be fluffy and golden brown.
  • Let them cool on a rack for at least 20 minutes before digging in.
