Salted Cashew Butter Cookies
Ingredients
- 1 cup cashew butter
- ⅓ cup honey
- 1 egg
- ¼ cup cashews chopped
- ¼ cup coconut flour
- ½ tsp cinnamon
- ½ tsp baking soda
- ½ tsp salt + more for sprinkling on top
Directions
- Preheat the oven to 350° F.
- Combine the wet ingredients until smooth, then add the dry ingredients except for the cashews and mix until everything is incorporated.
- Then, gently fold in the cashew pieces. Line a baking sheet with parchment paper. Using a cookie scoop, dollop the cookies onto the baking sheet, and sprinkle a little extra salt on top of each.
- Bake for 8-11 minutes.
- The cookies will be fluffy and golden brown.
- Let them cool on a rack for at least 20 minutes before digging in.
