Chilled Broccoli Salad with Dried Apricots and Tahini Dressing

Ingredients
For the salad:

cup
broccoli
chopped into florets and steamed for 2-3 minutes
1
cup
shredded carrots
(we used rainbow carrots for a pop of color!)
½
cup
dried apricots
chopped
½
cup
sliced almonds
For the dressing:
½
cup
tahini
- you’ll want it to be ‘drippy.’

Tbsp
red wine vinegar
1
lemon
juiced
½
tsp
garlic powder
salt and pepper
big pinch
¼ - ½
cup
water
- to thin as needed
Instructions
Whisk the ingredients for the dressing.
You’ll want a consistency that’s thinner than hummus but not quite as runny as salad dressing.
Toss the ingredients for the salad together, and coat with dressing to combine.
*We love this salad with some protein, too! Try hardboiled eggs, tofu, or chickpeas.
