Chilled Broccoli Salad with Dried Apricots and Tahini Dressing

For the salad:

  • 4 cup broccoli chopped into florets and steamed for 2-3 minutes
  • 1 cup shredded carrots (we used rainbow carrots for a pop of color!)
  • ½ cup dried apricots chopped
  • ½ cup sliced almonds

For the dressing:

  • ½ cup tahini - you’ll want it to be ‘drippy.’
  • 1 Tbsp red wine vinegar
  • 1 lemon juiced
  • ½ tsp garlic powder
  • salt and pepper big pinch
  • ¼ - ½ cup water - to thin as needed
  • Whisk the ingredients for the dressing.
  • You’ll want a consistency that’s thinner than hummus but not quite as runny as salad dressing.
  • Toss the ingredients for the salad together, and coat with dressing to combine.
  • *We love this salad with some protein, too! Try hardboiled eggs, tofu, or chickpeas.
