Chilled Broccoli Salad with Dried Apricots and Tahini Dressing
Ingredients
For the salad:
- 4 cup broccoli chopped into florets and steamed for 2-3 minutes
- 1 cup shredded carrots (we used rainbow carrots for a pop of color!)
- ½ cup dried apricots chopped
- ½ cup sliced almonds
For the dressing:
- ½ cup tahini - you’ll want it to be ‘drippy.’
- 1 Tbsp red wine vinegar
- 1 lemon juiced
- ½ tsp garlic powder
- salt and pepper big pinch
- ¼ - ½ cup water - to thin as needed
Directions
- Whisk the ingredients for the dressing.
- You’ll want a consistency that’s thinner than hummus but not quite as runny as salad dressing.
- Toss the ingredients for the salad together, and coat with dressing to combine.
- *We love this salad with some protein, too! Try hardboiled eggs, tofu, or chickpeas.
