As a kid, my Thanksgiving plate was just a huge pi As a kid, my Thanksgiving plate was just a huge pile of mashed potatoes. That’s it. They are still my favorite part of the meal, stealing most of the space on my plate. šŸ½ This recipe includes a 50/50 blend of Japanese sweet potatoes (they are white) and an entire head of cauliflower. So delicious...and so nourishing! Recipe below... ⁣

INGREDIENTS⁣
2 lbs Japanese sweet potatoes, scrubbed⁣
1 lg head cauliflower⁣
2 tbsp ghee⁣
1 tsp sea salt⁣
Freshly ground black pepper⁣
2 garlic cloves minced⁣
1/4 cup full-fat coconut milk⁣
⁣
DIRECTIONS⁣
1. Fill a large sauce pan with water and place over high heat.⁣
2. Cut the potatoes into 1 inch chunks. Once the water is boiling, add potatoes and cook for 8 minutes, uncovered. While the potatoes are cooking, remove the cauliflower leaves and chop into bite-size pieces. When the 8 minutes is up, add the cauliflower to the boiling water and cook for another eight minutes, uncovered, until they are fork tender.⁣
3. Drain the potatoes and cauliflower and return them to the sauce pan. Add the ghee, salt, pepper and garlic and mash the mixture with a potato masher until smooth.⁣
4. If you prefer a very smooth consistency, use a handheld blender after you have mash them down. If the mixture is dry, add 1/4 cup of coconut milk and continue to mash until well incorporated. ⁣
