Banana Chocolate Chip Flax Waffles

  • 3 eggs lightly beaten
  • 1 banana mashed
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • ¾ cup almond flour
  • ¼ cup flax meal
  • 1 tsp baking powder
  • ½ tsp baking soda
  • pinch salt
  • chocolate chips (optional)
  • Whisk the wet ingredients until smooth. Then add in the dry ingredients and whisk again until combined.
  • Grease a waffle iron with coconut oil spray. Pour ¼ cup of batter onto the iron and cook until golden brown. Repeat until all the waffles have been cooked. Top with extra banana slices, almond butter, or maple syrup.
Makes: 8 mini waffles, or 4 large waffles
