Cashew Butter Cardamom Granola

Ingredients
  • 1 cup rolled oats
  • 1 ½ cup cashews chopped
  • ½ cup pecans chopped
  • ½ cup unsweetened coconut flakes
  • 1 tsp cardamom
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • ½ cup dates pitted, chopped, and soaked
  • ¾ cup cashew butter
  • ¼ cup pure maple syrup
  • 2 tbsp coconut oil softened
  • 1 tsp vanilla extract
Directions
  • Preheat oven to 325°F.
  • Whisk the wet ingredients until smooth.
  • Combine the dry ingredients in a large bowl. Then add the wet to dry, and stir to combine.
  • Line a baking sheet with parchment paper, and pour the granola over top. Don’t worry about spreading it too evenly - you’ll want some chunks! bake for 30 minutes, flipping the granola halfway.
  • Let the granola cool completely before breaking it up. Store in an airtight container, away from heat.
