Chickpea Collagen Cookie Dough Bites

  • 1 cup chickpeas rinsed, drained, and skin removed*
  • ½ cup almond butter
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • ¼ cup coconut flour
  • 2 scoops collagen peptides
  • ½ cup mini chocolate chips
  • sea salt for sprinkling on top
  • Pulse all ingredients except for the salt in a food processor until a smooth dough forms (this may take a few minutes). Using a cookie scoop, scoop bites onto a parchment-lined plate. Sprinkle with salt, then chill for at least an hour before digging in.
Makes: 6-8 bites
Prep Time: 10 minutes
Cook Time: 1 hour for chilling
*To remove skin from chickpeas, lay a clean kitchen towel or layer of paper towels down on the counter and set the chickpeas on top. Using another paper towel (or clean kitchen towel), gently rub the chickpeas until the top layer of skin lifts off.
