Citrus Poppyseed Dressing
- 2 limes juiced
- ½ orange juiced
- 1 lemon juiced
- 2 tsp Dijon mustard
- 1 tsp mayonnaise
- 2 tsp pure maple syrup or honey
- ⅓ cup extra virgin olive oil + 1 tbsp
- 1 ½ tsp poppy seeds
- sea salt
- freshly ground pepper
- In a bowl, whisk the citrus juices with the mustard, mayonnaise and maple syrup.
- Slowly whisk in the oil until the dressing is creamy. Stir in the poppy seeds, season with salt and pepper, and enjoy!
Make ahead tip: Stores well in the fridge in an air-tight container for 7-9 days.
