Coconut Lime Chicken with Broccoli + Cauliflower Rice

  • 4 chicken thighs
  • 4 cups cauliflower rice
  • 2 tbsp coconut oil
  • 2 cups broccoli florets
  • 4 tbsp coconut aminos
  • 2 tbsp melted ghee
  • 2 tbsp sesame seeds
  • 1 lime squeezed
  • In a large sauté pan, blanch broccoli in water for 4-6 minutes until fork tender. Drain and set aside.
  • In same large sauté pan, add chicken, ghee, coconut aminos, and half the lime juice. Cook until chicken is fully cooked.
  • You can add cauliflower rice to chicken pan or cook separetly. Stir-fry on medium heat until cauliflower is done to your liking, 4-6 minutes.
  • Top with sesame seeds and squeeze remaining lime juice!
