Coconut Lime Chicken with Broccoli + Cauliflower Rice
- 4 chicken thighs
- 4 cups cauliflower rice
- 2 tbsp coconut oil
- 2 cups broccoli florets
- 4 tbsp coconut aminos
- 2 tbsp melted ghee
- 2 tbsp sesame seeds
- 1 lime squeezed
- In a large sauté pan, blanch broccoli in water for 4-6 minutes until fork tender. Drain and set aside.
- In same large sauté pan, add chicken, ghee, coconut aminos, and half the lime juice. Cook until chicken is fully cooked.
- You can add cauliflower rice to chicken pan or cook separetly. Stir-fry on medium heat until cauliflower is done to your liking, 4-6 minutes.
- Top with sesame seeds and squeeze remaining lime juice!
