Crockpot Coconut Chicken Street Tacos
Ingredients
Chicken
- 2 lbs chicken thighs boneless, skinless
- 1 onion sliced
- 1 cup full-fat coconut milk
- ¼ cup chicken stock or broth
- ¼ cup coconut aminos
- ¼ cup rice wine vinegar
- 2 limes juiced
- 2 tbsp green curry paste
- 1 inch fresh ginger minced
- 2 cloves garlic minced
- ½ cup fresh cilantro
- ½ cup fresh basil
- 2 tsp salt
Sauce
- 1 avocado
- ½ cup pineapple diced
- 1 cup cilantro
- 2 limes juiced
- ¼ cup avocado oil
- 1 tbsp sriracha (optional)
- pinch sea salt
Tacos
- tortillas
- diced pineapple
- black beans
- red onion
- scallions
- cilantro
Directions
- Place chicken thighs and onion in the crockpot. Whisk the remaining ingredients for the chicken and pour over the chicken and onions. Stir to coat fully.
- Cook on high for 4-6 hours. Once cooked, remove chicken and shred using two forks.
- Meanwhile, blend the ingredients for the sauce until thick and smooth.
- Assemble tacos with chicken, sauce, and taco ingredients of your choice!
