Dark Chocolate Cranberry Oat Breakfast Cookies
Ingredients
- 1 1/2 cup old fashioned oats, gluten free
- 1/2 cup dried cranberries
- 1/2 cup dark chocolate chunks
- 1/2 cup cashews
- 1/3 cup chia seeds
- 1/3 cup pumpkin seeds
- 1 cup cashew butter, more for drizzling
- 1/4 cup maple syrup
- 1/4 cup vanilla protein powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
Directions
- Pulse all ingredients in a food processor until a dough forms - it should stick together if you pinch it with your fingers. Roll into pucks, smoothing along the edges, and place on a lined plate or tray. drizzle with extra cashew butter (I also like to sprinkle extra goodies on top) and chill in the fridge for at least a half hour.
