Dark Chocolate Cranberry Oat Breakfast Cookies

  • 1 1/2 cup old fashioned oats, gluten free
  • 1/2 cup dried cranberries
  • 1/2 cup dark chocolate chunks
  • 1/2 cup cashews
  • 1/3 cup chia seeds
  • 1/3 cup pumpkin seeds
  • 1 cup cashew butter, more for drizzling
  • 1/4 cup maple syrup
  • 1/4 cup vanilla protein powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • Pulse all ingredients in a food processor until a dough forms - it should stick together if you pinch it with your fingers. Roll into pucks, smoothing along the edges, and place on a lined plate or tray. drizzle with extra cashew butter (I also like to sprinkle extra goodies on top) and chill in the fridge for at least a half hour.
Makes: 12 cookies
