Ginger, Lime & Mint Fruit Salad

Serves: 3


Juice and zest of 1 lime
1 inch chunk of ginger, zested
Pinch of sea salt
Pinch of cinnamon
1 medium banana, thinly sliced
1 pear, cored and chopped
1 navel orange, peeled and chopped
6 dried figs, stemmed and sliced thin
1⁄2 cup packed fresh mint, minced
2 tablespoons sesame seeds


1. In a small bowl whisk together the lime juice, ginger zest, salt and cinnamon.
2. Add the banana, pear, orange, dried gs into a large bowl and drizzle the lime mixture over the top. Mix gently to coat evenly.
3. Sprinkle the mint and sesame seeds over the top, giving it one final mix.
