Lemon Ginger Chicken Soup

Ingredients
  • 2 chicken breasts diced into 1 inch pieces
  • 1 onion diced
  • 2 carrots large, diced
  • 2 sticks celery diced
  • 1 jalapeno minced
  • 3 cloves garlic minced
  • 1 tbsp ginger freshly grated
  • 1 cup peas (fresh or frozen)
  • ½ cup cilantro chopped
  • 5 cups stock (chicken or vegetable)
  • 1 lemon juice and zested
  • 2 tsp salt
  • 1 ½ tsp pepper
  • 1 tbsp coconut oil
Directions

For Soup:

  • Heat the oil over medium-high heat in a large pot.
  • Saute the chicken breasts until mostly cooked through, then remove from the pot and set aside.
  • Next, add the onions, carrots, celery, jalapeno, garlic, and ginger and saute for 5-7 minutes or until they begin to soften.
  • Add the chicken back into the pot, then the salt, pepper, and stock.
  • Simmer for 30 minutes. Add the peas, cilantro, lemon juice and zest, and simmer for another 5 minutes.
