Lemon Ginger Chicken Soup
Ingredients
- 2 chicken breasts diced into 1 inch pieces
- 1 onion diced
- 2 carrots large, diced
- 2 sticks celery diced
- 1 jalapeno minced
- 3 cloves garlic minced
- 1 tbsp ginger freshly grated
- 1 cup peas (fresh or frozen)
- ½ cup cilantro chopped
- 5 cups stock (chicken or vegetable)
- 1 lemon juice and zested
- 2 tsp salt
- 1 ½ tsp pepper
- 1 tbsp coconut oil
Directions
For Soup:
- Heat the oil over medium-high heat in a large pot.
- Saute the chicken breasts until mostly cooked through, then remove from the pot and set aside.
- Next, add the onions, carrots, celery, jalapeno, garlic, and ginger and saute for 5-7 minutes or until they begin to soften.
- Add the chicken back into the pot, then the salt, pepper, and stock.
- Simmer for 30 minutes. Add the peas, cilantro, lemon juice and zest, and simmer for another 5 minutes.
