Mango Salmon + Cauliflower
Ingredients
- 1 lb salmon fillets skinned and cut into 2-3 portions
- 2 cloves garlic minced and divided
- ½ tsp of sea salt + more to taste
- ¼ tsp ground black pepper
- 2 tbsp coconut oil
- cauliflower rice
- ½ mango chopped
- 2 tbsp cilantro minced
Directions
- Preheat oven to 450°F and line a large baking sheet with parchment paper.
- Arrange the salmon on the lined baking sheet and drizzle 1 tbsp of olive oil over the fish. Pat the minced garlic cloves over the salmon then sprinkle the fish with salt and pepper. Bake for 12-14 minutes.
- While the salmon is cooking, heat coconut oil in pan over high heat. Add cauliflower rice and cook until lightly browned. Season with salt, remove, and set aside.
- Remove salmon from the oven. Serve on a plate with cauliflower rice, and sprinkle both with mango and cilantro. Enjoy warm!
