Mango Salmon + Cauliflower

Ingredients
  • 1 lb salmon fillets skinned and cut into 2-3 portions
  • 2 cloves garlic minced and divided
  • ½ tsp of sea salt + more to taste
  • ¼ tsp ground black pepper
  • 2 tbsp coconut oil
  • cauliflower rice
  • ½ mango chopped
  • 2 tbsp cilantro minced
Directions
  • Preheat oven to 450°F and line a large baking sheet with parchment paper.
  • Arrange the salmon on the lined baking sheet and drizzle 1 tbsp of olive oil over the fish. Pat the minced garlic cloves over the salmon then sprinkle the fish with salt and pepper. Bake for 12-14 minutes.
  • While the salmon is cooking, heat coconut oil in pan over high heat. Add cauliflower rice and cook until lightly browned. Season with salt, remove, and set aside.
  • Remove salmon from the oven. Serve on a plate with cauliflower rice, and sprinkle both with mango and cilantro. Enjoy warm!
