Peasant Bowl with Peanut-y Sauce

Ingredients

Spicy thai dressing

  • 2 tbsl ghee coconut oil or extra virgin olive oil
  • 2 bell peppers your choice, seeded and chopped
  • 2 garlic cloves minced
  • 1 head of kale chopped (or other favorite green)
  • brown rice 1 bag bag of frozen, pre-cooked - or favorite grain
  • cauliflower rice (frozen) 1 bag
  • 1 cup peas (frozen)
  • 3-4 eggs organic, pastured
  • sea salt to taste
  • black pepper to taste
Directions
  • Have the dressing on hand to make throwing this together a breeze.
  • Add the ghee or oil to a large skillet over medium heat. Once heated through, add the bell peppers and cook until soft, about 5 minutes, stirring frequently. Add in the garlic and the greens and cook until wilted, for kale this will be at least 4 minutes, stirring frequently.
  • When the veggies are complete, transfer to a plate. Using the same skillet, add the brown rice and cauliflower rice to the pan and mix well. Cover to let the steam heat them both through, cooking for ~ 5 minutes. Remove cover, add the peas and stir well until everything is cooked through - about 3-4 more minutes.
  • Turn off heat and keep the rice covered. In a separate pan, cook the eggs to the way you like them - poached, over easy, etc.
  • Scoop the rice mixture into a bowl, top with the veggies, drizzle on dressing and top with an egg. Season to taste with salt and pepper, enjoy!
