Sausage, Kale, and White Bean Soup

  • 1 onion diced
  • 3 organic carrots large, chopped
  • 2 stalks organic celery chopped
  • 4 cloves garlic minced
  • 3 organic pasture-raised chicken sausages sliced
  • 4 cup organic chicken stock (vegetable broth or water works here too)
  • 15 oz organic fired roasted tomatoes canned
  • 15 oz white beans canned, rinsed and drained (Eden Organics)
  • 1 bushel organic kale - stems removed and leaves torn into small pieces
  • 1 tbsp olive oil
  • 2 tsp salt
  • 2 tsp black pepper
  • 1 tsp oregano
  • 1 lemon juiced
  • In a large pot, warm the olive oil over medium high heat. Add the onion, carrot, and celery, and sauce for 5 minutes or until the onion becomes fragrant. Then, add the sausage and garlic, and spices, and sauce for another 5 minutes until the sausage starts to become a tiny bit crispy on the edges.
  • Add the stock and tomatoes into the pot and lower the heat to medium. Let the soup simmer for 15 minutes, and then add the beans, kale, and lemon juice. Simmer for another 5 minutes, and then top with lemon zest before serving.

Cook Time: 30 minutes
* If you are vegan/vegetarian, you can definitely skip the sausage and substitute another kind of bean, and swap in vegetable stock!
