Vegetarian Chopped Salad
Ingredients
- 2 cup romaine lettuce, sliced
- 2 cup red cabbage, chopped
- 1/2 red onion, sliced
- 4 cucumbers, mini
- 3/4 cup sundried tomatoes, sliced (grape tomatoes work too)
- 1/2 cup pepperoncinis, chopped
- 8 oz provolone (or firm mozzarella)
- 6 eggs, hard boiled (peeled and sliced)
- pinch sale and pepper
For the dressing
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- 1 lemon, juiced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp red chili flake (optional)
Directions
- Whisk the dressing until the oil incorporates with vinegar. Add all the ingredients for the salad into a large bowl, and toss with the dressing. (if you are planning on eating this throughout the week, toss the salad without the dressing, and add dressing once you serve.)
