Vegetarian Chopped Salad

  • 2 cup romaine lettuce, sliced
  • 2 cup red cabbage, chopped
  • 1/2 red onion, sliced
  • 4 cucumbers, mini
  • 3/4 cup sundried tomatoes, sliced (grape tomatoes work too)
  • 1/2 cup pepperoncinis, chopped
  • 8 oz provolone (or firm mozzarella)
  • 6 eggs, hard boiled (peeled and sliced)
  • pinch sale and pepper

For the dressing

  • 2 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 lemon, juiced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp red chili flake (optional)
  • Whisk the dressing until the oil incorporates with vinegar. Add all the ingredients for the salad into a large bowl, and toss with the dressing. (if you are planning on eating this throughout the week, toss the salad without the dressing, and add dressing once you serve.)
