My go-to breakfast


  • This is something that I make quite a bit for breakfast and really love. I can put it on the stove while I help the kids get ready for school. It’s pretty low-maintenance and delicious.

    1/4-1/3 c uncooked quinoa
    1 1/4 c unsweetened alternative milk/water/both
    fresh fruit topping (I love any kind of berry)
    2 T unsweetened coconut flakes
    almonds/other nuts for crunch (optional)
    salt to taste
    cinnamon to taste
    touch of maple syrup/honey for extra sweetness (I don’t usually add this because the fruit makes it sweet enough for me)

    1. Bring quinoa, salt, cinnamon and liquid to a boil; reduce to a simmer and cook until liquid is absorbed.
    2. Combine with coconut, nuts, sweetener, and top with fresh fruit.
