Recipe Recs!


  • When I told my kids I was doing this, they rolled their eyes and were like “What are we going to eat?” Turns out, they have been *loving* the past few days of eating — blueberry overnight oats, chocolate tahini cookies, banana bread with snickerdoodle frosting, taco soup, shrimp quinoa bowls, chipotle chicken salad – all winners! I’m salivating over the chicken curry street tacos in the slow cooker for tonight. Huge thanks for all of the amazing recipes that are not only healthy, but yummy – teaching the family that eating like this is actually something we look forward to.

    Quick question on the Yay or Nay list – how do you feel about rice noodles?

  • Lindsay! So honored to have you on board for P20 and I loooooove that your kids are enjoying the recipes (truly warms my heart). The blueberry overnight oats, tahini cookie and taco soup are on a regular rotation over here too. To answer your question re: rice noodles – YES, dish ’em up. Rice noodles are an awesome substitute in any dish or soup that would typically call for a non-GF noodle. Cheers to 1/2 through week one! 😉 xx

  • Thanks so much, C + D! I’m excited to break out my rice noodles for a little ramen 🙂 And lemme tell ya – the kids flipped over the coconut chicken street tacos! Can’t wait for salmon with arugula + pea pesto tonight. We haven’t eaten this well in ages…
