When I told my kids I was doing this, they rolled their eyes and were like “What are we going to eat?” Turns out, they have been *loving* the past few days of eating — blueberry overnight oats, chocolate tahini cookies, banana bread with snickerdoodle frosting, taco soup, shrimp quinoa bowls, chipotle chicken salad – all winners! I’m salivating over the chicken curry street tacos in the slow cooker for tonight. Huge thanks for all of the amazing recipes that are not only healthy, but yummy – teaching the family that eating like this is actually something we look forward to.
