We LOVE granola and this Cashew Butter Cardamom Granola is no exception. Store-bought kinds can be high in sugar and use processed oils but this homemade version is just how we like it – low sugar with healthy fats, protein, and other good-for-you ingredients. Eat it straight up as a snack or with almond milk or yogurt for a delicious, healthy breakfast!
Cashew Butter Cardamom Granola
Makes: 3 cups of granola
Prep Time: 10 minutes
Cook Time: 30 minutes
Ingredients
- 1 cup rolled oats
- 1½ cup cashews, chopped
- ½ cup pecans, chopped
- ½ cup unsweetened coconut flakes
- 1 tsp cardamom
- 1½ tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- ½ cup dates pitted, chopped, and soaked
- ¾ cup cashew butter
- ¼ cup pure maple syrup
- 2 tbsp coconut oil, softened
- 1 tsp vanilla extract
Directions
- Preheat oven to 325°F.
- Whisk the wet ingredients until smooth.
- Combine the dry ingredients in a large bowl. Then add the wet to dry, and stir to combine.
- Line a baking sheet with parchment paper, and pour the granola over top. Don’t worry about spreading it too evenly – you’ll want some chunks! bake for 30 minutes, flipping the granola halfway.
- Let the granola cool completely before breaking it up. Store in an airtight container, away from heat.
