We LOVE granola and this Cashew Butter Cardamom Granola is no exception. Store-bought kinds can be high in sugar and use processed oils but this homemade version is just how we like it – low sugar with healthy fats, protein, and other good-for-you ingredients. Eat it straight up as a snack or with almond milk or yogurt for a delicious, healthy breakfast!

Cashew Butter Cardamom Granola

Makes: 3 cups of granola
Prep Time: 10 minutes
Cook Time: 30 minutes

  1. Preheat oven to 325°F.
  2. Whisk the wet ingredients until smooth.
  3. Combine the dry ingredients in a large bowl. Then add the wet to dry, and stir to combine.
  4. Line a baking sheet with parchment paper, and pour the granola over top. Don’t worry about spreading it too evenly – you’ll want some chunks! bake for 30 minutes, flipping the granola halfway.
  5. Let the granola cool completely before breaking it up. Store in an airtight container, away from heat.
