Blueberry Chocolate Pudding

  • 1 avocado
  • 1 cup frozen blueberries
  • 1 tbsp cocoa powder
  • 2 tbsp coconut milk
  • 2 tbsp pure maple syrup
  • pinch sea salt
  • 1⁄2 tsp vanilla extract
  • 1 tbsp unsweetened coconut (optional)
  • 1 tbsp cocoa nibs (optional)
  • Blend all of the ingredients except for the coconut and cocoa nibs until smooth.
  • Serve into two bowls and top with coconut and cocoa nibs (or other toppings of your choice). Enjoy!
Make ahead tip: Make in the evening and have breakfast ready for the next two days.
