Blueberry Chocolate Pudding
Ingredients
- 1 avocado
- 1 cup frozen blueberries
- 1 tbsp cocoa powder
- 2 tbsp coconut milk
- 2 tbsp pure maple syrup
- pinch sea salt
- 1⁄2 tsp vanilla extract
- 1 tbsp unsweetened coconut (optional)
- 1 tbsp cocoa nibs (optional)
Directions
- Blend all of the ingredients except for the coconut and cocoa nibs until smooth.
- Serve into two bowls and top with coconut and cocoa nibs (or other toppings of your choice). Enjoy!

Make ahead tip: Make in the evening and have breakfast ready for the next two days.
