Cauliflower Scrambled Eggs
- 6 organic eggs
- ½ cup cauliflower puree
- 1 tbsp ghee or coconut oil
- 2 tbsp full fat coconut milk
- sea salt to taste
- Mix together all ingredients.
- Heat skillet on medium heat, add ghee or oil, wait until heated.
- Add egg mixture and stir using spatula until eggs are cooked light and fluffy.
A simple way to sneak some veggies in - great for kiddos!
