Cauliflower Scrambled Eggs

  • 6 organic eggs
  • ½ cup cauliflower puree
  • 1 tbsp ghee or coconut oil
  • 2 tbsp full fat coconut milk
  • sea salt to taste
  • Mix together all ingredients.
  • Heat skillet on medium heat, add ghee or oil, wait until heated.
  • Add egg mixture and stir using spatula until eggs are cooked light and fluffy.
A simple way to sneak some veggies in - great for kiddos!
