Massaged Citrus Kale Salad

Ingredients
  • 4 cups kale dino or lacinato, sliced into thin ribbons (center ribs removed)
  • 1 tsp extra virgin olive oil
  • 1 lime juiced
  • 1 grapefruit peeled and chopped
  • ½ cup cumquats sliced thin
  • ½ avocado cubed
  • ½ cup macadamia nuts chopped
  • ½ cup fresh cilantro chopped
  • 8 shrimp peeled and pre-cooked (thawed if frozen)
  • Citrus Poppyseed Dressing (see Citrus Poppyseed Dressing recipe)
Directions
  • Add the kale to a large mixing bowl. Drizzle the olive oil over the kale and massage the kale leaves with your hands. This will break down the leaves - perfect for salads!
  • Add in the grapefruit, cumquats, avocado, nuts, cilantro and shrimp along with Citrus Poppyseed Dressing and toss well to coat.
Notes
This salad is detoxifying and wonderful for digestion! If you can't find cumquats, you can simply use a little extra grapefruit. Feel free to swap out the macadamias for your favorite nuts, too!
