Omega Breakfast: Egg, Avocado & Walnuts

Serves: 4


4 hard boiled organic eggs
1 ripe avocado, pitted and diced
½ cup walnuts
Sea salt to taste
Freshly ground black pepper to taste
Paleo bread, corn tortillas or lettuce leaves (optional)


1. To make hard boiled eggs: Add to a saucepan of boiling water and cook for 5-7 minutes. Cool in an ice bath before handling. Peel eggs.
2. There are two ways to serve this: slicing the hard boiled eggs and avocado on a plate and sprinkling with walnuts and season with salt and pepper. Or do a mash! Add to a bowl, slicing them and mashing with a fork. Add the diced avocado and mash until well combined. Season with salt and pepper then mix in the walnuts
3. Enjoy on it’s own or serve on pieces of toasted paleo bread, on large lettuce leaves, or corn tortillas (corn tortillas for PN protocol only).
