Omega Breakfast: Egg, Avocado, and Walnuts

  • 4 organic eggs hard boiled
  • 1 avocado ripe, pitted and diced
  • ½ cup walnuts
  • sea salt to taste
  • freshly ground black pepper to taste
  • To make hard boiled eggs: Add eggs to a saucepan of boiling water and cook for 5-7 minutes. Cool in an ice bath before handling. Peel eggs.
  • There are two ways to serve this... You can slice the hard boiled eggs and avocado on a plate, season with salt and pepper, and add a side of walnuts. Or you can do a mash! Add the egg and avocado to a bowl and mash with a fork. Season with salt and pepper then mix in the walnuts.
  • Enjoy on it’s own or serve on pieces of toasted Paleo Bread, on large lettuce leaves, or corn tortillas.
