Salmon with Pea + Arugula Pesto
Ingredients
Salmon -
- 4 salmon filets the good ones!
- olive oil for brushing
- sea salt to taste
- black pepper to taste
Pesto -
- 1 cup peas (totally ok to use frozen peas that have been thawed)
- 1 cup arugula
- 1 garlic clove
- 1 lemon juiced and zest
- ⅓ cup olive oil
- ½ tsp sea salt
- ½ tsp black pepper
Directions
- Preheat the oven to 450° F.
- Line a baking sheet with parchment paper. Place the salmon skin-side down on the baking sheet. Brush each filet with a little olive oil, and season with salt and pepper to taste. Bake for 12-15 minutes, depending on thickness.
- Meanwhile, pulse all the ingredients for the pesto in a food processor. If you like your pesto a little thinner, add more oil! once the salmon is cooked through, dollop a big spoonful of pesto on top.
