Shrimp + Quinoa Bowls with Peanut Sauce

Ingredients

Shrimp

  • 2 cups raw shrimp peeled and deveined
  • 2 tsp avocado oil
  • 1 lime juiced
  • pinch salt

Sauce

  • ¾ cup natural peanut butter smooth, drippy could definitely sub almond or cashew butter here!
  • ¾ cup water
  • 1 tbsp rice wine vinegar
  • 1 tbsp coconut aminos
  • 2 tsp sesame oil
  • 1 lime juiced
  • fresh ginger 1 inch piece
  • 2 garlic cloves
  • ¼ tsp chili flake
  • pinch salt

Bowls -

  • 1 cup quinoa cooked
  • 1 mango diced
  • 1 avocado sliced
  • 1 bell pepper chopped
  • red cabbage a few handfuls of, chopped
  • scallions
  • cilantro
Directions
  • Blend the ingredients for the sauce and set aside.
  • Next, heat avocado oil in a skillet over medium high heat. Add the shrimp, squeeze the lime juice over top, and sprinkle with salt. Cook for 3-5 minutes or until shrimp is cooked through, then coat with half the peanut sauce.
  • Assemble the bowls and pour remaining sauce over each.
