Shrimp + Quinoa Bowls with Peanut Sauce
Ingredients
Shrimp
- 2 cups raw shrimp peeled and deveined
- 2 tsp avocado oil
- 1 lime juiced
- pinch salt
Sauce
- ¾ cup natural peanut butter smooth, drippy could definitely sub almond or cashew butter here!
- ¾ cup water
- 1 tbsp rice wine vinegar
- 1 tbsp coconut aminos
- 2 tsp sesame oil
- 1 lime juiced
- fresh ginger 1 inch piece
- 2 garlic cloves
- ¼ tsp chili flake
- pinch salt
Bowls -
- 1 cup quinoa cooked
- 1 mango diced
- 1 avocado sliced
- 1 bell pepper chopped
- red cabbage a few handfuls of, chopped
- scallions
- cilantro
Directions
- Blend the ingredients for the sauce and set aside.
- Next, heat avocado oil in a skillet over medium high heat. Add the shrimp, squeeze the lime juice over top, and sprinkle with salt. Cook for 3-5 minutes or until shrimp is cooked through, then coat with half the peanut sauce.
- Assemble the bowls and pour remaining sauce over each.
