Strawberries + Cream Protein Balls

  • 1 cup cashews
  • 1 cup freeze-dried strawberries
  • 1 cup shredded coconut
  • 1 scoop vanilla protein powder
  • ¾ cup dates
  • ½ cup honey
  • ½ cup coconut butter - if you’ve never played around with coconut butter - do it now!!! It is basically frosting.
  • 1-2 tbsp unsweetened almond milk
  • Pulse all ingredients except for the almond milk in a food processor until a dough forms. It will be a little chunky and might be dry - that’s ok!
  • Then, add 1 tbsp of almond milk and pulse again. The dough should come together a bit more, and if it’s still dry, add a second tbsp of almond milk.
  • Then, roll into golfball-sized balls and chill in the fridge for at least 1 hour.
Makes: 14 protein balls
Prep Time: 10 minutes
Cook Time: 1 hour, for chilling
