Hi Lizzie! I get it…people seem to either LOVE or HATE coconut. The reason so many recipes include coconut is because it is anti-inflammatory (more on this in our program). It is also rich in copper, iron and selenium (antioxidant that protects your cells). That said, there are plenty of other ways to get these nutrients and we’d never want you to eat something that you don’t enjoy. You can swap coconut oil for avocado or olive oil (easy peasy). You can also swap coconut flour for gluten-free oat or almond flour; however, the ratios are not equal (eg. 1 cup of coconut flour is NOT 1 cup of almond flour).
