Who needs banana pancakes when you can have Blueberry Lemon Chia Protein Pancakes? A classic favorite, upgraded – blueberries add antioxidants and fiber, chia seeds add healthy omega-3 fats, and vanilla protein powder adds a light sweetness and tons of staying power. We think you’ll love them!
Blueberry Lemon Chia Protein Pancakes
Ingredients
- 1 banana mashed well
- 3 eggs
- 1 tsp vanilla extract
- 1 lemon juice and zest of
- ¾ cup almond flour
- 1 scoop vanilla protein powder
- 1 tsp baking powder
- 1 tsp cinnamon
- ¼ tsp sea salt
- 1 tbsp chia seeds
- ½ cup fresh blueberries
Directions
- Whisk the wet ingredients until smooth. Then add all the dry ingredients except for the blueberries, and whisk again until everything is incorporated. Gently fold in the blueberries (you don’t want them to burst!).
- Spray a griddle with coconut oil spray, or coat with a little butter. Using a ¼c measuring cup, pour batter onto the griddle. Cook for 2-3 minutes until the top starts to bubble and the pancakes are golden brown on the bottom, then flip and cook for another 1-2 minutes.
