Hello! Happy to help provide bread crumb substitute options. They do sell gluten-free breadcrumbs/panko but the following work well too:
Coconut flakes: adds a little crunch and unique flavor
Almond meal or almond flour: as a binder/thickener
Coconut flour: as a binder/thickener
Ground chia or flax seeds: great added fiber and as a binder
