Cucumber Salmon Roll-Ups

  • 2 cucumbers peeled
  • 2-4 tbsp hummus
  • 6-8 oz smoked salmon
  • sea salt to taste
  • freshly ground black pepper to taste
  • Thinly slice the cucumbers lengthwise using a mandolin or a sharp knife.
  • Spread on some hummus (or see the Notes for some other ideas!) then layer on smoked salmon. Sprinkle with a pinch of sea salt and pepper.
  • Roll up the cucumber and press a toothpick through. Enjoy!
