Cucumber Salmon Roll-Ups
Ingredients
- 2 cucumbers peeled
- 2-4 tbsp hummus
- 6-8 oz smoked salmon
- sea salt to taste
- freshly ground black pepper to taste
Directions
- Thinly slice the cucumbers lengthwise using a mandolin or a sharp knife.
- Spread on some hummus (or see the Notes for some other ideas!) then layer on smoked salmon. Sprinkle with a pinch of sea salt and pepper.
- Roll up the cucumber and press a toothpick through. Enjoy!
