We made the mushroom/lentil tacos on Saturday night, actually, and ate again last night! They were great. Was awesome to have extra tahini dressing, too, to use for random veggies. (Siete cashew flour tortillas were on sale last week at my coop, too, so that was lucky :).

Not on this list, but I am making the Taco Pasta tonight (probably with a combo of Banza pasta and spaghetti squash noodles).
