Lindsay! So honored to have you on board for P20 and I loooooove that your kids are enjoying the recipes (truly warms my heart). The blueberry overnight oats, tahini cookie and taco soup are on a regular rotation over here too. To answer your question re: rice noodles – YES, dish ’em up. Rice noodles are an awesome substitute in any dish or soup that would typically call for a non-GF noodle. Cheers to 1/2 through week one! 😉 xx
